+1 for Lenovo Legion/HP Omen.

I never had success with archinstall, just the regular installation.

I’d go for Linux Mint/Fedora Linux.
Another thing, I would’ve play with it first on a VM, like VirtualBox.
I wouldn’t immediately wipe Windows if I were you. I’d do dualboot with Windows.
Then, when you’re ready, stay with dualboot system or go full neckbeard /j

Like other comments suggested, don’t take the risk, create a separate account.
Probably any Chromium browser that didn’t degoogle it.
Even though Firefox is way better, it’s also send user data by default.
On Firefox you can disable it, and there are a lot of forks that send no data/the minimal user data needed.
I’d recommend Mull or Fennec, and to stay away from (most of) Chromium broswers including Opera.

I saw one commenter suggested Arch itself. IMO it’s even a better idea than EOS.
archinstall
doesn’t have GUI, but it has very nice TUI (like what you have when you usehtop
), and you could finish selecting the options in very few minutes.
