Backblaze B2 is 6$ a month for 1TB and first 10GB is free. You pay proportionally (it cost me 2-3$ for last 7-8 months for 20-150 GB that accumulated over time). Keep in mind that you will spend more if you download backup, but you should use cloud backup as last resort anyway. I backup to 2nd local disk and also to B2 daily with Kopia. Didnt need backup fortunately, downloading from B2 small files ocasionally just for testing setup

There is an option to disable transcoding completely, try that. Also check is it working with subtitles disabled.

Bad stories about nextcloud scare me 😂 I hope Im not gonna jinx myself, but my nextcloud runs super stable for almost a year. I get some errors while updating, but service doesnt stop working and its usually simple fix by following the message it shows.
I removed apps that I dont use (most of them) and web ui became super fast on my budget server

Tbh Im using syncthing for obsidian notes, but android app is disconnecting from server quite a lot. I have to open syncthing app on my phone to make connection again. Also keeping all files on the phone would fill up storage.
Nextcloud can sync between devices,so you can even use files while offline. There is recycle bin and many more features and apps available. I mostly use filebrowser just to manage files on the server. Both apps are amazing

I had an issue with only 1 SSD powered from USB, couldnt even run SMART test. Found that after I got corrupted system. Getting external power supply makes it more bulky and have to be careful with compatibility
I use syncthing, it works fine, but sometimes it doesnt sync, I have to open syncthing on my phone and also on PC to triger sync. If I open same file on both devices it just creates copy so you end up with 2 files Edit: I use obsidian for notes

Start with hardware you have already, its high likely overkill anyway. If you have CPU that supports quicksync (intel 7th gen or newer iirc) you could remove GPU to reduce power consumption. QuickSync will make streaming easy.
Raspberry pi cant transcode so its not best for media server, but it can direct play so that might not be an issue at all. I upgraded from rpi to desktop PC because I had issues with power on rpi USB ports for storage. Its also impossible to upgrade RAM on rpi. Good thing about rpi is super low power consuption, but some small factor PCs can drain ~10W. My PC was at 22W with 3 SSD. You can get power meter like Shelly plug S to see power consuption yourself.
Any OS (I use debian) of your choice + docker and docker-compose. Then install portainer and manage all services from there.

I use jellyseer to grab movies and shows, there is also overseer for plex. I dont think you can run that in kodi, but looks like better approch to me anyway. There might be more options that Im not aware of
